Gluten Free Sesame Guava Cookies

These soft, chewy little cookies have a surprise in the middle: they’re filled with a creamy-sweet guava paste! They take a quick roll in sugar and sesame seeds before baking, so when you pull them out of the oven they’re crispy-crunchy on the outside, but tender on the inside. (Think: Newton vibes.) They’d make an excellent on-the-go treat — kids will love them! And PS, they’re gluten free, too.

Gluten Free Sesame Guava Cookies

Serves: 32

Ingredients

½ cup unsalted butter
1 Tbsp tahini
½ cup granulated sugar, plus 2 Tbsp, divided
½ cup minus 1 Tbsp packed brown sugar
1 large egg
1 tsp vanilla extract
1 ¾ cup Bob’s Red Mill Gluten Free 1-to-1 Baking Flour
½ tsp kosher salt
¼ tsp baking soda
¼ tsp xanthan gum
2 Tbsp toasted white sesame seeds
6 Tbsp guava paste

Directions

  1. In a small pot over medium low-heat, combine the butter and tahini. Cook until the butter melts and the tahini is softened, 3 to 4 minutes.
  2. In a large bowl, combine the melted butter and tahini, ½ cup of the granulated sugar, and the brown sugar. Beat with a whisk until fully incorporated.
  3. Add the egg and vanilla and whisk until combined and light in color, 1 minute.
  4. Add the gluten free flour, salt, baking soda, and xanthan gum. Fold together with a rubber spatula until combined.
  5. Cover and refrigerate until the dough is firm, 2 hours and up to overnight. 
  6. Preheat the oven to 350º. Line 2 sheet pans with parchment paper. In a small bowl, whisk together the remaining 2 tablespoons granulated sugar and the sesame seeds. 
  7. Portion the dough into 1-tablespoon-size balls. Use your thumb to make a large indent in the dough balls, add ½ teaspoon of guava paste to each well, and carefully form the dough around the paste. 
  8. Roll the dough balls between your palms to smooth them, then place them in the sesame sugar, turning to coat. Place the cookies on the baking sheet, about 2” apart. 
  9. Bake for 12 to 15 minutes until the cookies are just set. Let cool for 3 minutes, transfer to a wire rack, and let cool completely. 
  10. Store leftover cookies in an airtight container for up to 5 days.
