Mushroom Raclette Burger

Mushroom Raclette Burger

Serves: 4

Ingredients

3 Tbsp unsalted butter, divided
2 Gelson’s brioche burger buns
2 Gelson’s fresh Certified Angus Beef® Brand of Tri Tip Burger Patties
2 tsp kosher salt
1 tsp freshly ground Gelson’s black pepper
8 oz crimini mushrooms, thinly sliced
¼ cup beef stock
1 ½ tsp worcestershire sauce
2 oz sliced raclette cheese
½ cup arugula

Directions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the brioche buns, cut sides down, and toast for about 2 minutes or until golden brown. Set aside.
  2. On a small sheet pan, season the burger patties with salt and black pepper. Refrigerate for 30 minutes.
  3. To the large skillet, add the mushrooms and cook for about 5 minutes until softened and browned, stirring occasionally with a wooden spoon. Add the beef stock and worcestershire sauce and bring to a simmer. 
  4. Add the remaining butter, stir until fully combined. Allow the sauce to simmer until it becomes thick, about 5 minutes. Reduce the heat to low and keep warm until ready to use, stirring occasionally.
  5. Heat a large cast iron skillet over medium heat. Add the burgers and cook for about 3 minutes. Flip and cook for 3 minutes. Continue to cook for 6 minutes, flipping every minute until the burgers are well browned on both sides and register at 140º on an instant-read thermometer. 
  6. Place 1 oz of raclette cheese onto each burger and cover the skillet with a lid to melt the cheese, about 1 minute.
  7. Divide the arugula between the buns and top with a burger. Place the mushrooms on top and close the buns. Enjoy!
