Mezcal Papaya Slushie

Mezcal Papaya Slushie

Serves: 4

Ingredients

2 cups diced, ripe papaya
1 small carrot, peeled and rough chopped
½ red jalapeño pepper, seeded and rough chopped
4 oz mezcal
3 oz freshly squeezed lime juice
1 ½ oz agave
1 oz freshly squeezed orange juice
4 cups ice
1 lime wedge
Kosher salt, for garnish

Directions

  1. In a blender, combine the papaya, carrot, jalapeño, mezcal, lime juice, agave, orange juice, and ice. Blend on high speed until smooth. If the slushie feels too thick, add ¼ cup of cold water and blend until combined. 
  2. Run the lime wedge around the rim of 4 cocktail glasses. Fill a shallow plate with kosher salt and dip the rims of the glasses in the salt to coat. 
  3. Divide the cocktail among the glasses, and serve immediately. Enjoy!
