Mango Turmeric Chocolate Bites

These delicious dessert bites are made with just a few simple ingredients: coconut, chocolate, freeze dried mango, turmeric, and a tiny bit of honey. But the result is magical. The bright mango and creamy coconut add sunny, tropical tang to the dark, rich chocolate.
Our tip: Keep these beauties in the freezer. When you take a bite, it will snap like chocolate and then melt in your mouth like a tropical dream.

Mango Turmeric Chocolate Bites
Serves: 32
Ingredients
2 cups freeze-dried mango
1 cup packed unsweetened shredded coconut
2 Tbsp plus 2 tsp coconut oil, divided
1 tsp honey
½ tsp Gelson’s ground turmeric
1 cup dark chocolate chips
Directions
- In a high speed blender, add the freeze-dried mango. Blend on medium speed to a fine powder, about 30 seconds.
- Add the shredded coconut and 2 tablespoons of the coconut oil and blend on medium speed until a paste forms, 1 to 2 minutes. Increase the speed to high and blend until completely smooth and no longer gritty, 10 to 15 seconds. Scrape down the sides of the blender as needed.
- Add the honey and turmeric and blend until well combined, 30 seconds.
- Pour 1 ½ tsp of the mango filling into each cup of 2 silicone mini muffin pans or metal pans lined with paper liners. Freeze for 1 to 2 hours or until firm.
- In a heatproof liquid measuring cup, combine the chocolate and remaining 2 teaspoons of coconut oil. Microwave on high in 20 second intervals, stirring in between, until melted.
- Pour 1 ½ tsp of melted chocolate over the mango bites and freeze for 1 hour. Unmold the bites and store in an airtight container in the freezer for up to 1 month.
