Mango Turmeric Chocolate Bites

These delicious dessert bites are made with just a few simple ingredients: coconut, chocolate, freeze dried mango, turmeric, and a tiny bit of honey. But the result is magical. The bright mango and creamy coconut add sunny, tropical tang to the dark, rich chocolate.

Our tip: Keep these beauties in the freezer. When you take a bite, it will snap like chocolate and then melt in your mouth like a tropical dream.

Mango Turmeric Chocolate Bites

Serves: 32

Ingredients

2 cups freeze-dried mango
1 cup packed unsweetened shredded coconut
2 Tbsp plus 2 tsp coconut oil, divided
1 tsp honey
½ tsp Gelson’s ground turmeric
1 cup dark chocolate chips

Directions

  1. In a high speed blender, add the freeze-dried mango. Blend on medium speed to a fine powder, about 30 seconds. 
  2. Add the shredded coconut and 2 tablespoons of the coconut oil and blend on medium speed until a paste forms, 1 to 2 minutes. Increase the speed to high and blend until completely smooth and no longer gritty, 10 to 15 seconds. Scrape down the sides of the blender as needed. 
  3. Add the honey and turmeric and blend until well combined, 30 seconds.
  4. Pour 1 ½ tsp of the mango filling into each cup of 2 silicone mini muffin pans or metal pans lined with paper liners. Freeze for 1 to 2 hours or until firm. 
  5. In a heatproof liquid measuring cup, combine the chocolate and remaining 2 teaspoons of coconut oil. Microwave on high in 20 second intervals, stirring in between, until melted. 
  6. Pour 1 ½ tsp of melted chocolate over the mango bites and freeze for 1 hour. Unmold the bites and store in an airtight container in the freezer for up to 1 month.
