Make-Ahead McBreakfast Sandwich

Make-Ahead McBreakfast Sandwich

Serves: 6

Ingredients

Cooking spray
6 large eggs
Kosher salt, to taste
Freshly ground black pepper, to taste
6 English muffins
6 slices Canadian bacon
6 slices cheddar cheese

Directions

  1. Preheat the oven to 350º. Spray 6 wells of a non-stick muffin tin with cooking spray. 
  2. Crack one egg into each well, season each with a pinch of salt and pepper. Using a small whisk, break the yolks and gently beat each egg. 
  3. Bake for 8 to 10 minutes or until the eggs are just set. Let cool until safe to handle, then transfer the eggs to a wire rack. 
  4. Assemble the sandwiches by layering the bottom half of each English muffin with a slice of Canadian bacon, one egg cup, one slice of cheese, and top with the other half of the English muffin. Press down on the sandwiches to flatten and expand the eggs. 
  5. Wrap each sandwich tightly in plastic wrap and divide the wrapped sandwiches between two resealable freezer bags. Press out all of the air before sealing, and place in the freezer. Sandwiches can be stored in the freezer for up to 2 months.  
  6. When ready to cook, remove one sandwich from the freezer bag and plastic wrap, and transfer it to a plate. Microwave on high for 2 minutes, and enjoy!
