Lahmacun (Turkish Pizza) with Lemon Yogurt
Tired of the same old Friday night frozen pizza? This Turkish-inspired flatbread is simple to prep and takes about the same amount of time to bake as that store-bought pizza, but it’s just a bit more luxurious. The easy homemade flatbread bakes up tender and crisp, and the savory Turkish-spiced ground beef will knock your socks off. Tangy yogurt, bright lemon juice, and fresh parsley balances out the earthiness of the spices. Cut it in slices like pizza and serve it with lightly dressed greens and a glass of pinot noir. It makes a fabulous appetizer, too!

Lahmacun (Turkish Pizza) with Lemon Yogurt
For the Lahmacun Dough:
2 cups bread flour, plus more for dusting
2 tsp instant yeast
1 ½ tsp Gelson’s 100% California extra virgin olive oil, plus more for greasing
1 tsp kosher salt
¼ tsp granulated sugar
For the Spiced Beef and Dip:
1 ½ pounds ground beef
1 small yellow onion, finely chopped
1 Tbsp plus 1 tsp kosher salt, divided
1 Tbsp Gelson’s Organic Chili Powder
1 Tbsp Gelson’s Organic Ground Allspice
1 tsp Gelson’s Organic Ground Cumin
1 tsp Gelsn’s Organic Turmeric
1 tsp Gelson’s Organic Smoked Paprika
1 cup plain yogurt
Juice of 1 lemon
Chopped parsley, for garnish
Directions
- Preheat the oven to 500º.
- To make the dough: In the bowl of a stand mixer fitted with a dough hook, combine ¾ cups warm water, the bread flour, instant yeast, olive oil, salt, and sugar. Mix on low speed until the dough starts to come together. Increase the speed to medium and continue to mix until the dough comes together in a smooth ball and pulls away from the sides of the bowl, about 8 minutes.
- Transfer the dough to a large bowl greased with olive oil and cover. Allow to rise at room temperature until doubled in size, about 1 hour.
- Transfer the dough to a surface lightly dusted with flour. Portion the dough into 4 equal balls. Cover with a moist kitchen towel and allow to rest for 15 minutes.
- Lightly dust the dough balls with more flour. Using a rolling pin, roll each ball into a 10” circle. Cover the circles with a damp kitchen towel and set aside while you make the spiced beef.
- To make the spiced beef: In a large bowl, combine the beef, onion, 1 tablespoon of the salt, the chili powder, allspice, cumin, turmeric, and paprika. Mix with a large wooden spoon until fully incorporated.
- Spread an even amount of the spiced beef in a thin layer all the way to the edges of each of the dough circles.
- Working in batches, place each lahmacun onto a 10” cast iron skillet and bake for 10 to 15 minutes or until the dough is golden brown and the beef is cooked through.
- Transfer the lahmacun to a cutting board and slice as desired.
- In a small bowl, stir together the yogurt, lemon juice and remaining 1 teaspoon salt. Drizzle the yogurt over the lahmacun and garnish with parsley. Enjoy!
