Icebox Blueberry Applesauce
Serves: 10
Ingredients
Ingredients
2 organic Granny Smith apples peeled quartered and cored
2 organic Fuji apples peeled quartered and cored
2 organic Gala apple apples peeled quartered and cored
1 package frozen Woodstock Farms organic wild blueberries about 1 1/4cups thawed
1/4 cup fresh lemon juice
3/4 teaspoon ground cinnamon
Directions
Place apple quarters in a one gallon resealable freezer bag. Freeze overnight and up to several days. Remove frozen apples from freezer and thaw on the counter for about two hours, or leave them in the refrigerator for several hours, until they give slightly when you squeeze them. Coarsely slice thawed apples.
Place blueberries in the bottom of the work bowl of a large food processor at least 7 cup capacity. Add as much of the apples as will fit, lemon juice and cinnamon. Process for about three minutes, until no apple chunks remain. Add remaining apples and process until no chunks remain. There will be blueberry flecks in the sauce. Serve, refrigerate or re freeze.
