Grilled Toast with Tomatillos, Jamón, and Manchego
These satisfying toast stackers are the next best thing since avocado toast. Inspired by Spanish-style tapas like Pan con Tomate — garlicky grilled toasts topped with fresh grated tomatoes, olive oil, and flaky salt — this recipe keeps things simple and allows the quality of the ingredients to shine. We grill thick slices of rustic bread until they’re toasty and slightly charred, then top them with a bright and zesty tomatillo sauce, thinly sliced dry-cured ham, and nutty Manchego. They’re light, savory, cheesy, and satisfyingly crunchy. And the fresh tomatillo absolutely shines through — it’s the perfect complement to the salty meat and cheese. Serve these toasts for breakfast with a poached egg or as an appetizer with a glass of sparkling wine.

Heat a grill pan over medium-high heat. Brush the bread with olive oil and grill over high heat, turning once, until lightly charred, about 2 minutes each side. Transfer to a large cutting board.
Working over a medium bowl, grate the tomatillo halves on the large holes of a box grater until only the skins remain. Discard the skins.
Stir in the 2 tablespoons of olive oil and the crushed red pepper flakes. Season generously with salt and black pepper.
Spoon the tomatillo sauce evenly onto the toasts. Top each piece of toast with 1 ounce of jamón and ¼ ounce of shaved Manchego. Serve immediately.
