Caramelized Onion Dip


Greek yogurt and cream cheese, sweet, caramelized onions, and just a hint of spice, our onion dip tastes like a very fancy version of the French onion dip we all grew up eating. It’s dangerously good stuff, so you’ll want to make it when the whole family’s around — and let everyone help it disappear!


Our tips: While we must admit that this dip is fantastic on a classic ruffled potato chip, it really deserves better. Lesley Stowe’s fruity Raincoast Crisps are a marvelous complement to the dip’s creamy texture and natural sweetness. It’s also wonderful on salty slices of baguette toast and, if you want to throw some crudités in the mix, it’s lovely on a carrot, radish, or apple.

Ingredients

2 red onions peeled and cut in half lengthwise, sliced thinly lengthwise
2 Tbsp unsalted butter
2 Tbsp vegetable oil
⅛ tsp cayenne pepper
1 tsp kosher salt
½ tsp ground black pepper
¼ lb cream cheese
¾ cup greek yogurt
¼ cup mayonnaise
1 Tbsp lemon juice

Directions

  1. Heat the butter and oil in a sauté pan.
  2. Add the onions, cayenne, salt and pepper, and sauté until the onions are browned and caramelized, which will take at least 1 hour. Set aside to cool completely.
  3. Place the onions, cream cheese, greek yogurt, mayo, and lemon juice in a food processor, and pulse until fairly smooth.
  4. Remove to a serving bowl and check seasoning — add more cayenne if you’d like a bit more kick.
