5-Step Smashed Croissant Sandwich
We’re about to change the way you think about lunch, because this 5-Step Smashed Croissant Sandwich recipe is the sandwich of your dreams. Think panini, but on very buttery, very crispy croissants. It’s layer upon layer of flavors and textures: savory slices of turkey, creamy cheese, juicy, sweet-tart apples, and spicy arugula. And lest you think this sandwich is dry, we are here to assure you that it’s not, thanks to a slathering of lush, creamy pesto mayo — it tastes so good with the turkey! The whole thing is deeply satisfying, completely craveable, and big enough to share.
Here’s the recipe:
On a large cutting board, use a rolling pin to flatten 2 croissants to ¼” thick.
In a nonstick skillet, heat 2 Tbsp of unsalted butter over medium heat until foamy. Add the flattened croissants and cook for about 3 minutes on each side until deeply browned and toasted. Set aside.
In a small bowl, mix together ¼ cup mayonnaise and 1 Tbsp pesto until well combined.
Spread half the pesto mayonnaise over each croissant.
Top one croissant with 1 slice muenster cheese, 5 thin apple slices, 4 oz thinly sliced turkey breast, and ¼ cup arugula. Top the sandwich with the other croissant, slice in half. Enjoy.
