5-Step Air Fryer Zucchini Fries
Here's the recipe:
Wash and dry 2 medium zucchinis. Cut into strips about 3 ½” long and ½” wide.
In a medium shallow dish, whisk together 1 large egg and 2 Tbsp avocado oil. In a second medium shallow dish, whisk together ¾ cup almond flour, 3 Tbsp coconut flour, ¾ cup finely grated Parmesan cheese, ¾ tsp garlic powder, ½ tsp smoked paprika, ¾ tsp kosher salt, and ½ tsp freshly ground black pepper.
Dredge the zucchini strips in the egg mixture first, shaking to remove excess. Then coat the slices in the flour mixture, pressing the mixture into the zucchini to make sure all surfaces are coated, and tapping to remove excess.
Spray the air fryer tray with cooking spray. Working in batches, place the zucchini strips on the tray, leaving a little space between each, and generously spray the zucchini. Fry at 400° in the air fryer for 5 minutes, then flip the fries, continuing to cook for 2 to 4 minutes more, or until browned and cooked through.
Garnish with parsley. Serve hot with Sriracha aioli and lemon wedges.
