Celebrate Hatch Chile Season!
One of our favorite times of the year, the harvest has come in from Hatch, New Mexico and Hatch Chiles are upon us once again! These sweet and spicy peppers are harvested a bit prematurely to preserve the flavor and green color that makes them perfect for roasting. The roasters, large metal cages similar to giant bingo callers, are doused in flames and spun to roast the chiles quickly to the perfect amount. This process combined with the thick membrane on the chiles creates an exceptional flavor that explodes in your mouth, the perfect combo of spicy and sweet. We have added these peppers to many dishes and a few favorite pairings we found were Hatch Chile Omelets, Baked Chicken with Hatch Chile, and Hatch Chile salsa. We also created several special items for this season in our service deli. Try our Hatch Chile Salad, Hatch Chile Cornbread, Hatch Chile Sausage or our Hatch Chile Quiche for a heat-infused treat!
