Asian Chicken Noodle Soup

he tasty combination of anti-inflammatory ginger, garlic, chili pepper, carrots, baby bok choy, whole-wheat pasta and lime juice with protein-rich chicken can help shore up your immune system this winter. To save time at home, ask one of our meat cutters to thinly slice the chicken for you.

    Ingredients:
  • 2 tablespoons International Collection toasted sesame oil
  • 1?-2 tablespoons fresh ginger, minced
  • 8 cloves Melissa?s organic garlic, minced
  • 2 whole stalks lemongrass, outer layer peeled, stalks cut into thirds
  • 3 cups Pacific Natural Foods organic low sodium free range chicken broth
  • 3 cups Swanson?s certified organic free range chicken broth
  • 3 cups water
  • 1 tablespoon Yamasa less salt soy sauce
  • 4 ounces De Cecco whole wheat spaghetti, broken into thirds
  • 1 pound Rosie Organic boneless, skinless chicken breasts, thinly sliced crosswise
  • 3 skinny carrots, peeled and thinly sliced (about ? pound)
  • 6 shiitake mushrooms, wiped clean, stems removed, caps diced
  • 5 items baby bok choy, outer leaves discarded, leaves separated, large leaves halved lengthwise
  • 3 scallions, white and green parts thinly sliced
  • 1 red or green chili pepper, seeded and minced
  • 1 tablespoon fresh lime juice
  • ? cup fresh minced cilantro leaves
    Instructions:
  1. Heat oil over medium heat in a large soup pot. Add ginger, garlic and lemongrass and cook for three minutes, stirring often. Pour in chicken broths, water, and soy sauce. Raise heat to high and bring to a boil. Add spaghetti, and cook two minutes. Add chicken, carrots, and mushrooms and cook eight more minutes. Turn off heat, add baby bok choy leaves, scallions, chili pepper, lime juice and cilantro. Cover and let stand for three to five minutes to wilt bok choy. Remove lemongrass pieces. Ladle into bowls.
