Almond Butter and Banana-Blueberry Tartines

A tartine is an open-faced sandwich that is usually topped with a rich spread.  It allows you to have more of the protein- and antioxidant-packed filling and less bread, so your lunch can be extra nutritious and satisfying.  This super easy recipe is a fantastic vegan alternative to a typical meat-filled sandwich for those looking to reduce their cancer risk by eating more plant-based meals.  The bread I use here is made from sprouted intact whole grains and makes excellent hearty toast.  Store it in the freezer since it has no preservatives, and put frozen slices directly in the toaster oven (but defrost before putting it in a pop-up toaster).  This recipe can easily be scaled up to make multiple servings.

Ingredients: 
2 slices Food for Life Ezekiel 4:9 sprouted whole grain bread

1 small just ripe organic banana, peeled

2 tablespoons Woodstock organic frozen wild blueberries, thawed

2 tablespoons Maisie Jane’s smooth almond butter, mixed well before measuring

-pinch Le Saunier de Camargue fleur de sel sea salt

 Toast bread to desired doneness. 

  1. While bread is toasting, mash the banana with a fork.  Mix the thawed blueberries into the banana.
  2. Spread one tablespoon of almond butter on each slice of toast.  Spread half of the banana-blueberry mixture on top of each slice of toast.  Sprinkle ½ pinch of salt over the tops of each tartine.  Enjoy while toast is still warm.
